What better way to celebrate authentic Mexican flavours than with a fresh, delicious taco? Tacos are one of our favourite recipes for when the season starts to get cooler as they're full of fresh flavours and ingredients and the heat from the chipotle is nice and warming! These tacos contain our delicious Mexican Barbacoa and are topped with fresh avocado, spring onions, lime, coriander, corn and red onions! Keep reading for the recipe:
Ingredients (serves 4)
Small soft tortilla x 8
Mexican chipotle barbacoa (warmed) 300g
1 Ripe Avocado (chopped into small cubes)
2 Stalks of Spring Onion (finely sliced)
1 Red Onion (finely sliced)
Charred Corn (2 cobs)
Chopped Coriander (16g)
1. Grill the tortillas until warm and slightly charred.
2. Top each tortilla with around 37.5g of Mexican spread, avocado, sprinkling or red and spring onion, 10g of corn (charred in grill), coriander and a squeeze of lime. Tuck in and enjoy!
