VEGAN ROSE PISTACHIO BITES
This recipe is a quick energy bite - Indian style! Rose and pistachio are two prominent flavors in Indian culture - roses have been around for over 5000 years and symbolize love, purity and spiritual joy.
Candied dried rose petals are used as a garnish on desserts, rose flavoring is infused in food such as rice pudding, rose water is used for skincare and rose flowers are also used in many perfumes! It reduces inflammation, helps with a sore throat, and has many other properties aside from its unique flavor and smell. Meanwhile, pistachios are found in many desserts and are gifted during festivals as a symbol of love and well wishes. They are used in popsicles (kulfis), in drinks (pista lassi), as a garnish on sweets (mithai), or just for eating as a snack (roasted pistachios are where it’s at). These two flavors are combined in this recipe to bring you the wonderful flavors of India!

Ingredients (Makes 6 balls)
1/2 Cup Raw Pistachios (de-shelled)
1/2 Cup Soft, Pitted Dates
1/4tsp Matcha Powder
A Pinch of Salt
1tbsp Rose Petals

Method:
Blend together all ingredients (except the rose petals) in a blender until a dough forms.
Pulse the rose petals in 1-2 times so there are still chunks remaining.
Roll into 6 bites. Store in the fridge or at room temperature.
Keep them at room temperature when ready to eat. They might get difficult to bite into if you eat them straight out of the fridge.
